Ingredients
50g Dried Cranberry
50g Dried Mulberry
2 Eggs (cold)
250g Buttercup
150g Castor sugar
2 tsp Vanilla essence
½ tsp Soda bicarbonate
300g Wheat flour
50g Nestum
½ tsp Coffee Mate
Method
1. Whisk the butter and castor sugar at slow speed until light and fluffy.
2. Add the vanilla essence, eggs, soda bicarbonate and Coffee Mate – beat for a while.
3. Add the dried cranberry, Nestum and dried mulberry and mix it with your hand.
4. Add the flour and knead it until it becomes dough.
5. Spread the dough and then cut it into squares.
6. Bake for 15 – 20 minutes at 180 °C.
