Mixed Fruit Cookies

Ingredients
250g Buttercup
120g Icing sugar
300g Plain flour
5g Baking powder
80g Mixed fruits
Method
1. Beat Buttercup and icing sugar in a mixer until well mixed.
2. Add in plain flour and baking powder followed by mixed fruits.
3. Take a parchment paper and cut into four pieces.
4. Take 250g of the dough and place it on a piece of the cut parchment paper.
5. Roll the dough in the parchment paper to shape it into a long cylinder. Twist the ends of the paper to secure the shape.
6. Repeat steps 4 and 5 for the rest of the dough.
7. Refrigerate the dough in a chiller for 1 hour or in a freezer for 30 minutes.
8. Once refrigerated, cut the dough using a very thin and sharp knife.
9. Heat for 25-30 minutes at 150’C.
