Ingredients

250g ‘Marie’ biscuits (finely ground)
80g Peanuts (finely ground)
150g Buttercup (melted)

500g Cream cheese
2 cups Whipping cream
2 Egg yolks
3 tbsp Plain flour
1 tbsp Vinegar
3 tbsp Castor sugar
100g Lemon filling
Method
1. For the base, combine all of ingredients A together and then pour them into the baking tin and press down firmly into the base. Place it in the chiller for at least 3 hours.
2. For the cake, beat the cream cheese together with sugar until it is creamy. Then, add in all of ingredients B except for the lemon filling Continue beating until all ingredients are well-combined.
3. Pour the mixture onto the base.
4. Bake the cake at 170°C for 40 minutes in a steam bath.
5. Cool the cake for awhile. Then, spread the lemon filling evenly on the cake.
